FRESH BLUEBERRY PANCAKES .............mmmmMMMMMMMMMmmmmmm...........Sunday Brunch Treat or tasty fruity dessert!

110 g all purpose wheat free flour (OR gluten free flour - depending on dietary needs)
1 tsp baking powder
15 g coconut oil (or organic butter)
280 ml milk (buttermilk, goat, rice, almond, oat or soya/soy)
1 large egg 
pinch of salt
1  firm banana, chopped fairly small
125 g blueberries, fresh or defrosted from frozen

Melt butter and whisk into the egg. Add milk. Stir all the dry ingredients together, then add the milky mixture. Whisk until all smooth with no flour lumps! Add chopped banana into mixture and leave to sit for a few minutes in the fridge. Pour batter into hot pan and create pancakes however you like, thick or thin, small or large.

Enjoy with loads of blueberries, fresh fruit, Greek yoghurt, honey and cinnamon! Mmmmmmmmmmm......

 

FRESH FRUIT SALAD - Nothing beats this breakfast number on a hot Summer morning...

A big bowl of freshly chopped up fruit (organic) if possible, delicious! Go for your favourites, and enjoy! Sprinkle over chopped up nuts, seeds, ground up linseed, bee pollen, let your imagine go.... And this is lovely with a freshly squeezed juicy drink, try a Pineapple Cardamom juice or Watermelon and Mint juice for a refreshing and dextoxing start to your day!



STEAMING HOT PORRIDGE (with fruity treats)
- My winter favourite!

Heat together 1 cup of organic oats and approx 2 cups filtered water until just cooked (or follow directions on the package). Sprinkle in a good couple of pinches of real organic sea salt, some raisins, dates, chopped up nuts, chopped up dried fruit such as apricots, figs, prunes..... Mmmmmmmmmmmm!!!!!!! Eat with organic soy milk, rice milk, almond milk. Oh and a dash of cinnamon. This is sooo good it's making me hungry!
* Be generous with cinnamon ... it is one of natures magical sugar balancers...

CINNAMON TEA!

Buy cinnamon quills from your health shop. Make a lovely tea out of 1/2 quill, infused with boiling water. The longer you leave to soak the more delicious the drink becomes. Sweet, spicy and medicinal for lowering blood sugars! This is the sort of medicine I like...


APPLE CRUMBLE -for wintertime!

Wash and Chop up 3-4 apples (peel if you like), and throw in a handful or 2 of raisins. Sprinkle cinnamon generously over the apples. Then make this crumble which only takes a couple of minutes. (or can use stewed apples)

To make the crumble in a bowl, mix together until all "crumbley"
1 cup of organic oats (or more if desired)
1/2 cup organic coconut oil
1 tsp cinnamon
1/2 tsp mixed spice
A bit of apple juice or water to mix if required.

Bake in hot oven until apples are cooked and topping is golden and crunchy!

Eat with almond milk, rice milk, or soy milk.

PRINCESS DELIGHTS - a summer, winter, breakfast, lunch, snack, anytime RAW favourite! Kiss

This is a mix and match recipe, so add quantities as you desire....Mix together a few cups of organic rolled oats, with your favourite natural juice (no concentrates). I like apple, but you can use any. You want it to completely absorb into the oats and enough jucice remaining so the mixture is still wet. Add any or some of the following... a grated apple, cinnamon, fruit, nuts, elderflower juice, rosewater or orange water. Now this mixture will keep for up to 7 days in the refrigerator, if it lasts that long! To serve you can layer with fruit (berries are super luscious and give this dish a wonderful zing of colour and vibrancy!) in a sundae glass or just scoop out of bowl and eat as is.... Yummmmmmmmy!
